DAIRY FREE – VEGAN – GLUTEN FREE
A HEALTHIER ALTERNATIVE
Dark chocolate and I have a special relationship. The smooth and creamy texture partnered with fruity yet bitter, sometimes rich and intense, flavours gently squeeze my taste buds. Add an assortment of crunchy, crispy, chewy ingredients and you have yourself a perfect concoction.
SERVES: 8 good-sized bars or 12 smaller bars
PREP: 20 minutes + 30-45 minutes freezing time
TOTAL: 50-65 minutes
INGREDIENTS
- 150g chocolate of your choice, broken into pieces
- 10g puffed rice cereal
- 10g cornflakes cereal, roughly crushed
- 2 biscuits of your choice, broken into pieces (20g)
- 20g plain almonds
- 30g plain cashews, roughly broken
- 20g sultanas
- 3-4 pitted medjool dates, cut into small pieces (30g-40g)
INSTRUCTIONS
- Using the double boiler method, melt the chocolate. This is where you place a saucepan on the stove, pour boiling water into it and place a correctly sized glass bowl inside the pan. Melt the chocolate in the glass bowl, stirring occasionally.
- Once the chocolate has melted, add each ingredient one at a time, stirring with a spatula after each addition. I like to sample some of the mixture to make sure I have a good proportion of all of the ingredients! Make any additions as required.
- Spoon the mixture into a plastic container lined with baking paper, ensuring that the mixture is of 2cm thickness.
- Place the container in the freezer for 30-40mins. Once hardened, remove from the freezer. You may want to wait a little while before slicing into bars.
- These bars are best stored in the fridge.
SIDE NOTES
- I use a combination of 70% and 85% dark chocolate. If your taste palette does not agree with my love for higher percentage dark chocolate, then I advise you use 60%, as the dried fruit will sweeten up the bars. If you have a sweet tooth, then by all means, use whichever percentage you are comfortable with. If you want your bars to be vegan or dairy free, please double check the ingredients.
- Please ensure you use GF cornflakes and puffed rice if required.
- You can add or substitute the dried fruit with any other dried fruit of your preference. I think dried cranberries or cherries would work well if you prefer a bit of a sour taste.
